The Spirit of Brazil in Chicago
Introducing Cabana Cachaça and the art of the Caipirinha Cocktail

Cachaça, the national spirit of Brazil, is the third most distilled spirit in the world. Unlike its brother rum, which is distilled from molasses, cachaça (pronounced kuh-SHAH-suh) is distilled from sugarcane.

Cabana Cachaça is about to put the spirit in the spotlight with its luxury artisanal cachaça that’s quickly becoming a fixture in leading cocktail establishments across the country, including chic Chicago restaurants.

With the booming popularity of caipirinha (say: kee-pur-REEN-yah), Brazil's national cocktail, and drinks made with freshly muddled herbs, spice and fruits, cachaça has become a must-have for any serious restaurant, bar or nightclub with a sophisticated clientele. Fermented and distilled in Brazil directly from freshly pressed sugarcane and rested for up to six months in exotic Jequitibá wood barrels, Cabana elevates and refines cachaça from its slightly vegetal flavor to a smooth and versatile elixir.

    Brasilian Wax

  • 2 oz. Cabana Cachaça
  • Pineapple juice
  • Splash of club soda
  • In an ice-filled glass, add equal parts cabana Cachaça and pineapple juice, a splash of club soda, and stir. If desired, add passion fruit purée.

Cabana Cachaça, the "Authentically Brasilian" cachaça, was launched in the United States two years ago by Matti C. Anttila, a twenty-something New York investment banker turned spirits entrepreneur who first discovered cachaça while experiencing the heady nightlife of Rio de Janeiro.

Cachaça is the third most distilled spirit in the world, even though it’s been relatively unknown in the United States until recently. With that, Anttila desired to share Brazil’s best kept secret with an American audience.

His recipe is already making waves. The delicate nose and smooth round finish of Cabana Cachaça is pleasing patrons of the chicest bars, restaurants and night clubs that now serve Cabana Cachaça. Many of these establishments have begun offering bottle service of the brand, a first for the cachaça category. These hot spots have used Cabana not only to prepare the ultimate caipirinha, or its Cuban sister cocktail, the mojito, but a wide range of sophisticated cocktails. In addition, Cabana Cachaça was awarded a gold medal at the 2008 Ministry of Rum Tasting Competition against 61 different varieties of sugar cane spirits.

"We set out to introduce something American consumers had never experienced—a truly super-premium cachaça, worthy of sitting alongside Grey Goose, Patrón and other super-premium and luxury category leaders," Anttila said.

Anttila said the excellence of his artisanal cachaça will transform the way customers approach the drink. "Utilizing an innovative production process developed by our master distiller, Cabana's versatility and quality has led it to be embraced by mixologists and sophisticated consumers in the most exclusive locations-places cachaça would never have worked in before," he said.
